👩🏽🍳 Chef Mable’s Signature Scones
Yield: Approximately 12–15 scones
Bake: 150°C for approximately 14 minutes
Ingredients
Dry ingredients
700 g all-purpose flour
200 g soft butter
50 g sugar
30 ml baking powder
Pinch of salt
Wet ingredients
250 ml milk
2 eggs
For finishing
1 egg, beaten, for egg wash
Brown sugar, for sprinkling
Optional additions
Raisins
Grated cheese
Method
Place the flour, soft butter, sugar, baking powder and salt into a bowl.
Rub/crumb the butter into the dry ingredients until the mixture resembles fine crumbs.
In a separate bowl, whisk together the 250 ml milk and 2 eggs.
Add the wet mixture to the dry ingredients.
Using a butter knife, gently mix until just combined. Do not overmix—this helps keep the scones light and tender.
For variations, gently fold in raisins or grated cheese, or leave them plain.
Turn the dough onto a lightly floured surface and gently roll it out.
Cut into your desired scone shapes.
Place onto a lined baking tray.
Brush the tops with egg wash and sprinkle lightly with brown sugar.
Bake at 150°C for approximately 14 minutes, or until lightly golden and cooked through.
Allow to cool slightly before serving.

Handle the dough gently and avoid overmixing. The less you work the dough, the softer and lighter your scones will be.
